Hoping this week is filled with relaxing, Christmas movies, baking & wrapping all your last minute gifts! We are settling in in full on nesting mode for Christmas and preparing for baby boy to arrive shortly after the holidays! Since I can’t be home this year I decided to try and make my family’s favorite gingerbread cookie recipe! For my first time, I was intimidated, but they came out great! Even if you can’t be with family this year I found that FaceTime & making their favorites certainly help ๐
Ingredients:
- 1 cup soft butter
- 1 cup sugar
- 1 cup molasses
- 5 cups flour
- 2 tsp baking soda
- 3 tsp ground ginger
- pinch of ground cloves
- 1/2 cup cold, strong tea **my aunt told me to make this first so it has time to cool and get strong!
- 1 tsp vanilla
Directions:
cream butter & sugar until light. Beat in molasses. Add in dry ingredients, alternate with cold tea. Mix well! Add vanilla. Finish Mixing and chill for at least 24 hours! I divided in half, wrapped in plastic and stored in the fridge! It makes a ton so hoping I can freeze half the dough for later!
heat oven to 350 degrees & bake for 8-10 minutes!
Frosting Recipe:
- 1 tablespoon Butter
- 3/4 cups Confectioner’s sugar, Sifted
- 1 tablespoon Milk
- 1/2 teaspoon Vanilla
- 1/4 teaspoon Lemon Juice
Melt: Butter
Add and beat until smooth the following:
-Confectioners sugar (sifted), Milk, Vanilla, Lemon juice

- Bake Christmas cookies
- Get together any family, parents, aunts or co-worker gifts!
- Wrap up any work that needs to be finished or pushed until the new year! ๐
