Happy Monday. Monday is always hard to get back into the work week after time off. I wanted to share an easy and healthy recipe we do once a week and this easy outfit that helps me looked put together when in reality Mason doesnt even let me dry my hair. LOL .
You can actually buy Zuchinni noodles at the store premade (which is what I normally do) Whole foods or trader joes have them. There are also spiralizers like this one or this one which allows you to make your own. I have this insert for my mix master but honestly havent used it yet because its too easy to buy them.
Mason also loves this dish I just make sure to leave out the red pepper and cut tiny pieces.
Recipe
- 4 medium zucchini
- 3 to 4 sausages, sliced.
- 1 tablespoon olive oil.
- 3 to 4 garlic cloves, minced.
- Crushed red pepper flakes, to taste.
- Parmesan cheese
- Chicken sausage I love this brandย
Sautee sausages in a pan first then add zoodles and garlic. ย Sometimes before adding zoodles I also add mushrooms or tomatoes.
Top with red pepper flakes, parmesan cheese and salt. My husband likes to top with alfredo sauce which I like to keep on hand. I also serve garlic bread on the side for him (just toast add butter and garlic)
Ok no onto the outfit details. I get a lot of questions about these sunglasses. I wear them EVERYDAY and they have been worth the investment for sure because they go with every outfit. I just ordered this $10 designer dupe pair which I am excited about!
Tunic – wearing small. I love that it covers my behind
Leggings – Wearing these spanx. If in between sizes size up.
Sneakers – Love this fun leopard pair I have on but order a full size down. I also want these mules under $25
